Letter From Joe Peterson
Dear Customers... I hope to be one of the first to send Season's Greetings to you. I'm sure you all have heard the political statements over the last several months, indicating a needed "change is coming". Well, Peterson's is no different... we too are making a change to benefit you, our valued customers. Effective December 3rd, Dan Sherry will become our new General Manager. Some of you may already know Dan, as he has over twenty-seven years' experience in the restaurant industry. His time at T.G.I. Friday's, Dalt's, Keystone Grill, Waters Edge, and most recently, Flemings, brings to us a great deal of expertise. Read his letter in this eNewsletter to learn more about Dan. Holiday Greetings from the Kitchen.
Doesn't it seem this Holiday Season snuck up on us? No worries, we're ready to celebrate and look forward to providing you with a great dinner at Peterson's. Come in for a relaxing evening or a holiday party as we make this season special.
Just completed are our newly updated menus... with plenty of exciting items for a perfect dining experience. Some of the new dishes we're offering for a cold winter's evening delight are Veal Tenderloin with Spaetzle, Baby Carrots, and a Foie Gras Veal Jus, or Grilled Swordfish with a Citrus Pesto Crust and a Potato Parsnip Puree. Pleasantly finish off the meal with our Pumpkin Bread Pudding or the decadent Molten Chocolate Cake.

"The Poet" – Cosentino Winery
The bright side to winter is that red wine tastes better in the colder months... and our featured wine, "The Poet", will be a perfect way to warm up. The wine is from Cosentino Winery in Yountville, California.
Established in the Napa Valley in 1990, Cosentino Winery has been a trend setter in the California wine industry, widely recognized for producing more ultra premium varietals than any other winery in the Napa Valley. Subject to growing conditions, Cosentino Winery may make up to thirty different wines in a particular vintage. No other wine in Cosentino's portfolio represents this signature variety and versatility quite like "The Poet", designated in 1989 as America's first "Meritage". This wine truly knows no boundaries, akin to the spirit in which Cosentino Winery continues to create new and exciting wines year after year.
2004 was an excellent year for Bordeaux varieties in Napa Valley. With warm, sunny days and very little rain at harvest time, growers were able to pick grapes early and at a leisurely pace. Many wine writers agree that 2004 was the best year since 1999 for Napa reds.
The 2004 Cosentino "The Poet" is a blend of cabernet sauvignon, cabernet franc and merlot. The grapes were fermented separately and aged in French oak barrels. Assemblage, the process of blending the varieties together, occurred after 27 months of aging. Deep ruby in color, youthful with tart cherry and currants up front, polished in the middle with pomegranate that evolves into a long spice-filled finish. "The Poet" 2004 is a bright, balanced wine with structure and richness.
The cold wind of winter is here... so take the chill away with a bottle of "The Poet" at Peterson's. Wishing you a season filled with warm memories and happy times.

A Letter from Peterson's New General Manager
Hello...
I'm really excited about my new opportunity at Peterson's! I look forward to working with our excellent staff, the Peterson Family, and serving you.
I have been in the restaurant industry for over twenty-seven years, so many of you may recognize me from my days long-past, at T.G.I. Friday's, Dalt's, or maybe from my decade at The Keystone Grill. Most recently, I was with Water's Edge for seven years and then Fleming's Prime Steakhouse.
It's shocking how time flies but I have been married for over twenty wonderful years. In my free-time, I enjoy fishing and working on my computer.
Being involved with Peterson's, a locally-owned, independent, fine dining restaurant, will allow me to expand my ideas and be more involved in serving customers. Please contact me at any time to let me know how I can make your visit to Peterson's the very best.
